Ingredients
Streusel Topping
- 1/2 cup (4oz) Unsalted Butter, melted
- 1 cup AP Flour
- 1/2 cup Brown Sugar
- 1/4 cup Granulated Sugar
- 1/2 tsp Cinnamon
- 1/2 tsp Kosher Salt
Muffin Batter
- 1 Egg
- 1/3 cup Unsalted Butter, melted and cooled
- 1 cup Granulated Sugar
- 1 tsp Vanilla Extract
- 3 Ripe Bananas
- 1 1/2 cups AP Flour
- 1/2 tsp Cinnamon
- 1/4 tsp Nutmeg
- 1 tsp Baking Powder
- 1/2 tsp Baking Soda
- 1/4 tsp Kosher Salt
- 1 cup Walnuts, chopped
Instructions
- Preheat oven to 350F.
- Combine all streusel ingredients in a bowl and mix until a crumbled texture forms and set aside.
- Line a muffin/cupcake pan with muffin liners.
- In a large bowl, whisk together egg, sugar, melted butter and vanilla.
- Mash bananas with a fork and add to wet ingredients.
- In a small bowl mix together flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
- Add dry ingredients to wet ingredients and combine.
- Add in walnuts.
- Mix together and scoop evenly between the pan.
- Top each muffin with the streusel, lightly pressing the streusel topping into the batter.
- Bake for about 25-30 minutes or until a knife comes out clean in the center.
- Let rest for about 10 minutes then transfer to a wire rack to cool.
