Banana Walnut Streusel Muffins

Ingredients

Streusel Topping
  • 1/2 cup (4oz) Unsalted Butter, melted
  • 1 cup AP Flour
  • 1/2 cup Brown Sugar
  • 1/4 cup Granulated Sugar
  • 1/2 tsp Cinnamon
  • 1/2 tsp Kosher Salt
Muffin Batter
  • 1 Egg
  • 1/3 cup Unsalted Butter, melted and cooled
  • 1 cup Granulated Sugar
  • 1 tsp Vanilla Extract
  • 3 Ripe Bananas
  • 1 1/2 cups AP Flour
  • 1/2 tsp Cinnamon
  • 1/4 tsp Nutmeg
  • 1 tsp Baking Powder
  • 1/2 tsp Baking Soda
  • 1/4 tsp Kosher Salt
  • 1 cup Walnuts, chopped

Instructions

  1. Preheat oven to 350F.
  2. Combine all streusel ingredients in a bowl and mix until a crumbled texture forms and set aside.
  3. Line a muffin/cupcake pan with muffin liners.
  4. In a large bowl, whisk together egg, sugar, melted butter and vanilla.
  5. Mash bananas with a fork and add to wet ingredients.
  6. In a small bowl mix together flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  7. Add dry ingredients to wet ingredients and combine.
  8. Add in walnuts.
  9. Mix together and scoop evenly between the pan.
  10. Top each muffin with the streusel, lightly pressing the streusel topping into the batter.
  11. Bake for about 25-30 minutes or until a knife comes out clean in the center.
  12. Let rest for about 10 minutes then transfer to a wire rack to cool.
