Blackened Chicken & Shrimp with Herby Avocado Yogurt Sauce

People always ask me what I eat for dinner after I have cooked all day long for others. It usually involves something simple, quick, and healthy. This recipe makes it into my weekly dinner routine more often than not. I usually make the sauce and prep the chicken in the morning, go to work, and simply have to throw it on the grill or in the pan when I come home. In just a few minutes…dinner. Try this recipe and I bet you will be making this for dinner all the time. And the best part is, leftover chicken and shrimp goes great in a lunch salad.

Blackened Chicken & Shrimp with Herby Avocado Yogurt Sauce

Ingredients

Blackened Chicken and Shrimp
  • 1 pound Chicken Thighs, boneless and skinless
  • 1 pound Shrimp, peeled and deveined
  • 1 TB Chili Powder
  • 1 TB Paprika
  • 1/2 TB Garlic Powder
  • 1/2 TB Onion Powder
  • 2 tsp Kosher Salt
  • 1 tsp Red Pepper Flakes
  • 1 tsp Ground Cumin
  • 1 tsp Dried Oregano
  • 1/2 tsp Dried Thyme
  • 1/2 tsp Ground Black Pepper
  • Olive Oil
Herby Avocado Yogurt Sauce
  • 1 - 7 oz container Greek Yogurt (200g)
  • 1 cup Cilantro (20g)
  • 1/2 cup Basil (10g)
  • 1/4 cup Mint (5g)
  • 1 Garlic Clove (5g)
  • 1/2 Avocado (60g)
  • 2 Limes, zested and juiced (40g)
  • 1 tsp Kosher Salt (5g)
  • 1/3 cup Water (75g)
  • 1/2 Jalapeño (optional)

Instructions

  1. For the herby avocado sauce, combine all ingredients in a blender until smooth. Set aside.
  2. Place chicken and shrimp in separate plastic bags.
  3. Add a generous drizzle of olive oil to each bag and toss in the blackening spice mix. (You may not need all of the spice mix).
  4. Make sure spices and oil are coated evenly over chicken the shrimp. Place in fridge for at least 30 minutes to overnight.
  5. Heat grill to high heat of about 600F. Or bring a cast iron pan to hight heat if not using a grill.
  6. Grill chicken, cooking about 5 minutes per side (5-7 minutes per side if using cast iron pan) until a nice char forms and chicken is cooked throughout. Grill shrimp for about a minute (1 -2 minutes in pan) per side.
  7. Serve chicken with sauce and roasted or grilled vegetables of your choice.
