Brie, Prosciutto, & Fig Jam Puff Pastry
Melty, gooey brie cheese, prosciutto and fig jam all wrapped inside and flaky buttery puff pastry. What more could you ask for?

Ingredients
- 14 oz Puff Pastry, thawed
- 1/4 cup Fig Jam
- 8oz Brie Cheese (1 oz per pastry)
- 4 oz Prosciutto
- 1 Egg, whisked with 1 TB water
Instructions
- Roll the puff pastry dough out using a rolling pin and dusting flour until it's about a 1/8 inch thick, keeping it's rectangle shape.
- Trim off the ends and then cut the dough into 16 equal rectangles. Match two pastry pieces together (one will be the top part and one will be the bottom to make 8 pies.)
- If the dough pieces are too very soft at this point, transfer them to a parchment lined baking sheet and place in the freezer to let it firm up for about 5 minutes before filling.
- Once the dough has chilled, place 1 oz of brie cheese down on the bottom pastry pieces.
- Top with a small spoonful of jam and 1/2 oz of prosciutto.
- Brush the edges of the dough with the egg wash and cover each piece with a matching top pastry piece.
- Seal the edges with a fork, and cut a 1 inch slit in the center of each pie with a knife.
- Brush the tops with egg wash and transfer the pies to a parchment lined baking sheet, if they aren't already on one.
- Chill the pies in the fridge for 30 minutes.
- Heat oven to 400F.
- Bake pies for 20-25 minutes until golden brown.
