Brunch Latkes

Ingredients

Latkes
  • 1 pound Russet Potatoes (2 medium potatoes), grated
  • 1/4 Yellow Onion, grated
  • 3 TB AP Flour (or potato starch to make Passover friendly)
  • 1 Egg
  • 1 tsp Kosher Salt
  • Black Pepper
  • Vegetable Oil, for frying
Toppings
  • Smoked Salmon
  • Herb Cream Cheese
  • Chopped Chives
  • Capers
  • Lemon Wedges
  • Everything Bagel Spice

Instructions

  1. Wrap grated potatoes in a cheese cloth or dish towel and wring out as much liquid as possible.
  2. Add potatoes to a mixing bowl along with flour (or potato starch), egg, onion, salt, and a few cracks of black pepper.
  3. Combine everything together.
  4. Heat about 1 inch of vegetable oil in a large skillet to 350F.
  5. Form patties from the potato mixture and place into the oil.
  6. Fry until dark golden brown on both sides. (about 3-4 minutes per side)
  7. Place fried latkes on a paper towel and finish with salt.
  8. Top latkes with cream cheese, smoked salmon, capers, everything bagel spice, chives and a squeeze of lemon juice
