Cheesy, Caramelized Onion & Mashed Potato Puff Pastry Pies

Cheesy, Caramelized Onion & Mashed Potato Puff Pastry Pies

Ingredients

  • 1 cup Leftover Mashed Potatoes
  • 1 Yellow Onion, sliced
  • 1 TB Unsalted Butter
  • 1/2 cup Gruyere Cheese, grated
  • 1/2 cup Gouda Cheese, grated
  • 1 - 14oz package Frozen Puff Pastry, thawed
  • 1 Egg, whisked with 1 TB water (egg wash)

Instructions

Caramelized Onions
  1. Heat a stainless steel pan to medium-low heat.
  2. Melt the butter in the pan and add in the onions.
  3. Season with salt and let the onions cook down, without touching them.
  4. After about 10 minutes, the onions should start to lightly brown on the bottom.
  5. Toss them around and let them continue to cook down, tossing them around every 10 minutes.
  6. If the pan starts to get dry and brown bits form on the bottom, add in a splash of water to release the brown bits and continue letting the onions caramelize.
  7. After about 40 minutes the onions should be a dark golden color.
  8. Remove from the pan and allow to cool completely.
Assembly
  1. Roll the puff pastry dough out using a rolling pin and dusting flour until it's about a 1/8 inch thick, keeping it's rectangle shape.
  2. Trim off the ends and then cut the dough into 16 equal rectangles. Match two pastry pieces together (one will be the top part and one will be the bottom to make 8 pies.)
  3. If the dough pieces are too very soft at this point, transfer them to a parchment lined baking sheet and place in the freezer to let it firm up for about 5 minutes before filling.
  4. Once the dough has chilled, place a large spoonful of mashed potato down on the bottom pastry pieces.
  5. Top with some caramelized onions and both cheeses.
  6. Brush the edges of the dough with the egg wash and cover each piece with a matching top pastry piece.
  7. Seal the edges with a fork, and cut a 1 inch slit in the center of each pie with a knife.
  8. Brush the tops with egg wash and transfer the pies to a parchment lined baking sheet, if they aren't already on one.
  9. Chill the pies in the fridge for 30 minutes.
  10. Heat oven to 400F.
  11. Bake pies for 20-25 minutes until golden brown.
