Ingredients
Chicken Fajitas
- 2 pounds of Boneless Skinless Chicken Thighs
- 1 Yellow Onion, sliced
- 3 Bell Peppers, sliced
- 2 TB Chili Powder
- 1 TB Ground Cumin
- 1 TB Paprika
- 1 tsp Garlic Powder
- 1 tsp Onion Powder
- 1 tsp Oregano
- 2 tsp Kosher Salt
- 1/2 tsp Black Pepper
- 1/2 tsp Crushed Red Pepper
Cilantro Lime Crema
- 8 oz Sour Cream
- 1 Jalapeno, chopped
- 1 cup Cilantro, loosely packed
- 3 Scallions, chopped
- 2 Limes, juiced
- 1 Garlic Clove
- 1/2 tsp Ground Cumin
- 1 tsp Kosher Salt
Instructions
Chicken Fajitas
- Preheat oven to 400F.
- Combine spices and sprinkle over the chicken.
- Heat a pan to medium-high heat with some oil and sear chicken for a minute on each side.
- Transfer chicken to a tin foil lined baking sheet and finish cooking in the oven for about 7-10 minutes (internal temperature reaches 165F).
- Add peppers and onion to the pan, season with salt, and sauté for about 7-10 minutes.
- Once the chicken is finished, allow it to rest for about 5 minutes.
- Slice chicken and serve with peppers, onions, crema, and flour tortillas.
Crema
- Combine all ingredients in a blender.
