Chicken Pesto Couscous Salad

  • 1/2 pound Chicken Breast
  • 1/4 cup Pesto
  • 4 cups Romaine, shredded
  • 1/3 Parmesan Cheese, grated
  • 1 Lemon, juiced
  • 2 ears of Corn, charred and cut off the cob
  • 1/4 cup Radish, sliced
  • 2 cups Broccoli, roasted
  • 2 cups Couscous, cooked
  • 1/4 cup Pine Nuts, toasted
  • Black Pepper
  • Kosher Salt


  1. Sear chicken in a pan on medium heat until cooked through.
  2. Remove chicken, dice it up and add back to the pan with the pesto.
  3. Toss pesto with the chicken and remove from the pan to cool off.
  4. Combine remaining ingredients in a large mixing bowl. Add in the pesto chicken and toss everything together.
  5. Season with black pepper and kosher salt to taste.
