Chicken Pesto Couscous Salad

Ingredients
- 1/2 pound Chicken Breast
- 1/4 cup Pesto
- 4 cups Romaine, shredded
- 1/3 Parmesan Cheese, grated
- 1 Lemon, juiced
- 2 ears of Corn, charred and cut off the cob
- 1/4 cup Radish, sliced
- 2 cups Broccoli, roasted
- 2 cups Couscous, cooked
- 1/4 cup Pine Nuts, toasted
- Black Pepper
- Kosher Salt
Instructions
- Sear chicken in a pan on medium heat until cooked through.
- Remove chicken, dice it up and add back to the pan with the pesto.
- Toss pesto with the chicken and remove from the pan to cool off.
- Combine remaining ingredients in a large mixing bowl. Add in the pesto chicken and toss everything together.
- Season with black pepper and kosher salt to taste.
