Chicken Schnitzel with Herb Lemon Dijon Sauce

Ingredients
- 3 Chicken Breasts, butterflied and cut to make 6 thinner chicken breasts
- 1 cup AP Flour
- 2 Eggs, whisked
- 1 cup Panko Breadcrumbs
- 1 cup Plain Breadcrumbs
- 1 tsp Dijon Mustard
- 1 Lemon, zested and juiced
- 1/3 cup Mayonnaise
- 1 TB Chives, chopped
- 1 TB Parsley, chopped
- Kosher Salt
- Vegetable Oil, for pan frying

Herb Lemon Dijon Sauce
- Whisk together dijon, lemon, chives, parsley, and mayonnaise.
Chicken Schnitzel
- Place chicken between plastic wrap and pound with a meat mallet or rolling pin until 1/4 inch thick.
- Place eggs in one container, flour in a second, and combine both breadcrumbs and place in a third container.
- Season chicken with salt, dredge in the flour, then dip into the egg, and fully coat in the breadcrumb mixture.
- Repeat these steps with each piece of chicken breast.
- Place enough vegetable oil to cover the bottom of a wide pan and heat to 350F.
- Fry chicken, working in batches so the pan isn't overcrowded, until golden brown (about 3 minutes per side).
- Drain chicken on paper towels and season with salt.
- Serve with sauce, and (optional) an arugula, lemon and parmesan salad.
