Chicken Tikka Skewers with Spicy Cilantro Chutney

Chicken Tikka Skewers with Spicy Cilantro Chutney

Ingredients

Spicy Cilantro Chutney
  • 2 cups Cilantro, leaves and stems
  • 1 tsp Kosher Salt
  • 1 tsp Honey
  • 1/2 tsp Ground Cumin
  • 1/2 Jalapeño, with seeds
  • 1/4 cup Water
  • 1 Garlic Clove
  • 1/2 inch knob Ginger
Chicken Tikka Skewers
  • 2 pounds Chicken Thighs, boneless and skinless and cut into bite-sized pieces
  • 1 cup Greek Yogurt
  • 4 Garlic Cloves, minced
  • 1 inch knob Ginger, grated
  • 2 tsp Garam Masala
  • 1 tsp Turmeric
  • 1 tsp Ground Cumin
  • 1 tsp Paprika
  • 1/2 tsp Cayenne
  • 1 tsp of Kosher Salt
  • Wooden Skewers, soaked in water for 30 minutes
  • Avocado Oil

Instructions

Spicy Cilantro Chutney
  1. Add all ingredients to a blender and blend until smooth.
Chicken Tikka Skewers
  1. Combine yogurt, garlic, ginger and spices in a large bowl.
  2. Add in chicken and fully coat with the yogurt mixture.
  3. Cover and marinate in the fridge overnight.
  4. Heat oven to 400F.
  5. Skewer chicken and season with salt.
  6. Heat a nonstick pan to medium-high heat with some avocado oil.
  7. Sear chicken on all sides, about a minute per side.
  8. Transfer seared chicken to a baking sheet and finish cooking in the oven (about 10 minutes).
  9. Serve with spicy cilantro chutney.
