Ingredients
Spicy Cilantro Chutney
- 2 cups Cilantro, leaves and stems
- 1 tsp Kosher Salt
- 1 tsp Honey
- 1/2 tsp Ground Cumin
- 1/2 Jalapeño, with seeds
- 1/4 cup Water
- 1 Garlic Clove
- 1/2 inch knob Ginger
Chicken Tikka Skewers
- 2 pounds Chicken Thighs, boneless and skinless and cut into bite-sized pieces
- 1 cup Greek Yogurt
- 4 Garlic Cloves, minced
- 1 inch knob Ginger, grated
- 2 tsp Garam Masala
- 1 tsp Turmeric
- 1 tsp Ground Cumin
- 1 tsp Paprika
- 1/2 tsp Cayenne
- 1 tsp of Kosher Salt
- Wooden Skewers, soaked in water for 30 minutes
- Avocado Oil
Instructions
Spicy Cilantro Chutney
- Add all ingredients to a blender and blend until smooth.
Chicken Tikka Skewers
- Combine yogurt, garlic, ginger and spices in a large bowl.
- Add in chicken and fully coat with the yogurt mixture.
- Cover and marinate in the fridge overnight.
- Heat oven to 400F.
- Skewer chicken and season with salt.
- Heat a nonstick pan to medium-high heat with some avocado oil.
- Sear chicken on all sides, about a minute per side.
- Transfer seared chicken to a baking sheet and finish cooking in the oven (about 10 minutes).
- Serve with spicy cilantro chutney.
