Classic Panzanella Salad

This beautifully simple summer salad doesn’t require measuring ingredients. You can use below as a guideline, and just toss together your favorite fresh veggies, herbs and cheese with a vinegar dijon dressing. And don’t forget the crusty croutons to soak everything up.

Ingredients
- 2 cups Cucumbers, chopped
- 2 cups Tomatoes, chopped
- 1 cup Kalamata Olives, chopped
- 1/2 cup Red Onion, thinly sliced
- 1/2 cup Fresh Basil, chopped
- 1 cup Fresh Mozzarella, torn
- 2 cups Homemade Croutons
- 1/4 cup Olive Oil
- 1/4 cup Red Wine Vinegar
- 1 TB Dijon Mustard
- Kosher Salt
- Pepper
Instructions
- Combine veggies, basil, cheese and croutons in a large mixing bowl.
- Mix together vinegar, dijon and olive oil.
- Coat everything with the dressing.
- Season with salt and pepper.
