Classic Panzanella Salad

(Vegetarian)

This beautifully simple summer salad doesn’t require measuring ingredients. You can use below as a guideline, and just toss together your favorite fresh veggies, herbs and cheese with a vinegar dijon dressing. And don’t forget the crusty croutons to soak everything up.

Classic Panzanella Salad

Ingredients

  • 2 cups Cucumbers, chopped
  • 2 cups Tomatoes, chopped
  • 1 cup Kalamata Olives, chopped
  • 1/2 cup Red Onion, thinly sliced
  • 1/2 cup Fresh Basil, chopped
  • 1 cup Fresh Mozzarella, torn
  • 2 cups Homemade Croutons
  • 1/4 cup Olive Oil
  • 1/4 cup Red Wine Vinegar
  • 1 TB Dijon Mustard
  • Kosher Salt
  • Pepper

Instructions

  1. Combine veggies, basil, cheese and croutons in a large mixing bowl.
  2. Mix together vinegar, dijon and olive oil.
  3. Coat everything with the dressing.
  4. Season with salt and pepper.
