Coconut Lime Ceviche

Not only does ceviche require very few ingredients, but it is incredibly easy to make. This recipe is refreshing, healthy and full of flavor.

Coconut Lime Ceviche

Ingredients
- 1 pound Black Sea Bass, skin removed and diced
- 1 cup Lime Juice
- 1 TB Lime Zest
- 1 cup Coconut Milk
- 1 Jalapeño, thinly sliced
- 1 Fresno Chili, thinly sliced
- 1/4 cup Cilantro, leaves picked
- 1/4 cup Red Onion, thinly sliced
- 1/4 cup Corn Nuts
- 1 Avocado, diced
- Kosher Salt to taste
Instructions
- Combine lime juice, coconut milk, sea bass and 1/8 cup of red onion in a bowl.
- Make sure all of the fish is covered by the liquid.
- Cover with plastic wrap and marinate in the fridge for an hour.
- Toss in remaining ingredients except the corn nuts and season with salt.
- Plate ceviche and top with the corn nuts.
- Serve with plantain chops or tortilla chips.
