Curry Ramen Noodle Stir Fry

This curry paste is what makes this dish so good. It has tons of flavor, and all you need is a few simple ingredients to transform noodles into an amazing stir-fry dish.

Curry Ramen Noodle Stir Fry

  • 2 packets Ramen Noodles, cooked to package instructions
  • 2 TB Mama Lams Vegan Mild Curry Paste
  • 2 Eggs, whisked
  • 2 cups Cabbage, chopped
  • 1/2 cup Scallions, chopped
  • 1 cup Chicken Breast, thinly sliced
  • 1 Bell Pepper, thinly sliced
  • Kosher Salt
  • Vegetable Oil


  1. Bring a nonstick pan to medium high heat with a little vegetable oil.
  2. Add in cabbage and peppers, season with salt and sauté for a minute until browned.
  3. Remove vegetables from pan and set aside.
  4. Add chicken and brown for a minutes and remove to the bowl with the vegetables. (the chicken will finish cooking later)
  5. Drizzle a little more vegetable oil in the pan, add in the noodles with the vegetables and chicken and toss together.
  6. Create a well in the center of the pan, pour the eggs in the well and scramble.
  7. Add in Mama Lam’s curry paste and scallions and toss everything together. If the pan looks a little dry add in a splash of water.
  8. Season noodles with salt to taste.
