Curry Ramen Noodle Stir Fry
This curry paste is what makes this dish so good. It has tons of flavor, and all you need is a few simple ingredients to transform noodles into an amazing stir-fry dish.
Curry Ramen Noodle Stir Fry

Ingredients
- 2 packets Ramen Noodles, cooked to package instructions
- 2 TB Mama Lams Vegan Mild Curry Paste
- 2 Eggs, whisked
- 2 cups Cabbage, chopped
- 1/2 cup Scallions, chopped
- 1 cup Chicken Breast, thinly sliced
- 1 Bell Pepper, thinly sliced
- Kosher Salt
- Vegetable Oil
Instructions
- Bring a nonstick pan to medium high heat with a little vegetable oil.
- Add in cabbage and peppers, season with salt and sauté for a minute until browned.
- Remove vegetables from pan and set aside.
- Add chicken and brown for a minutes and remove to the bowl with the vegetables. (the chicken will finish cooking later)
- Drizzle a little more vegetable oil in the pan, add in the noodles with the vegetables and chicken and toss together.
- Create a well in the center of the pan, pour the eggs in the well and scramble.
- Add in Mama Lam’s curry paste and scallions and toss everything together. If the pan looks a little dry add in a splash of water.
- Season noodles with salt to taste.
