Ingredients
Fried Cod and Assembly
- 1 pound of Cod, cut into 1 inch strips
- 1 cup Beer
- 1 cup AP Flour
- 1 Egg
- 1 tsp Kosher Salt
- 1 tsp Baking Powder
- Vegetable oil for frying
- Flour Tortillas
- Shredded cabbage, Sliced Radish, Cilantro (to garnish)
Avocado Cilantro Sauce
- 1/2 Avocado
- 1 cup Cilantro, packed
- 2 cloves Garlic
- 1/2 tsp Ground Cumin
- 1 - 200g container Greek yogurt
- 2 Limes, juiced and zested
- 1/2 Jalapeño (optional)
- 1/3 cup Water
- 1 tsp Kosher Salt
Instructions
- Blend together the avocado cilantro sauce ingredients, set aside.
- Bring a large pot of vegetable oil to 350F.
- Whisk together beer, flour, salt, egg, and baking powder until a smooth batter forms.
- Coat the cod in the batter and lower into the oil.
- Fry until golden brown and the fish is cooked (about 5 minutes).
- Assemble cod into tortillas and drizzle avocado sauce over. Top with cabbage, radish and cilantro.
