Green Goddess Salad

Ingredients
Green Goddess Dressing
- 2 tsp Capers
- 1 tsp Dijon
- 1 Garlic Clove
- 2 Lemons, zested and juiced
- 1 oz Feta Cheese
- 1 1/2 cups Basil, Dill, Parsley and Chives (equal parts of each)
- 1 cup Greek Yogurt
- 1/4 cup Sour Cream
- Kosher Salt
Sourdough Breadcrumbs
- 1 cup Sourdough Bread, diced
- 1 Garlic Clove
- 1 TB Butter
- 2-3 TB Olive Oil
- Kosher Salt
Remaining Salad Ingredients
- 10 Cups Mixed Greens (Romaine, Butter Lettuce, Radicchio, anything you prefer)
- 1 cup Crumbled Feta
- 1/2 cup Radishes, thinly sliced
- Kosher Salt
- Olive Oil
- Chopped Chives and Dill, for garnish
Instructions
Green Goddess Dressing
- Blend all ingredients together until smooth.
- Season with kosher salt to taste.
- Store in the fridge until ready to use.
Sourdough Breadcrumbs
- Pulse the bread in a food processor until mostly fine (it's okay if there are some bigger pieces).
- Melt butter in a pan with the olive oil on medium low heat.
- Add in the garlic clove and breadcrumbs and season with kosher salt.
- Continue tossing in the pan for about 8-10 minutes until the breadcrumbs are dark golden brown and crisp.
- If the pan looks a little dry, add in more olive oil.
- Remove the golden breadcrumbs to a paper towel line plate and let them come to room temperature.
Salad
- Add the mixed greens to a large mixing bowl along with the feta and radish slices.
- Pour in some dressing (you won't need to use all of it) and toss together.
- Season with kosher salt and black pepper to taste.
- To serve, place the dressed greens down first then top with the sourdough breadcrumbs, a drizzle of olive oil, chopped chives and chopped dill.
