Green Goddess Salad

GREEN GODDESS SALAD

Ingredients

Green Goddess Dressing
  • 2 tsp Capers
  • 1 tsp Dijon
  • 1 Garlic Clove
  • 2 Lemons, zested and juiced
  • 1 oz Feta Cheese
  • 1 1/2 cups Basil, Dill, Parsley and Chives (equal parts of each)
  • 1 cup Greek Yogurt
  • 1/4 cup Sour Cream
  • Kosher Salt
Sourdough Breadcrumbs
  • 1 cup Sourdough Bread, diced
  • 1 Garlic Clove
  • 1 TB Butter
  • 2-3 TB Olive Oil
  • Kosher Salt
Remaining Salad Ingredients
  • 10 Cups Mixed Greens (Romaine, Butter Lettuce, Radicchio, anything you prefer)
  • 1 cup Crumbled Feta
  • 1/2 cup Radishes, thinly sliced
  • Kosher Salt
  • Olive Oil
  • Chopped Chives and Dill, for garnish

Instructions

Green Goddess Dressing
  1. Blend all ingredients together until smooth.
  2. Season with kosher salt to taste.
  3. Store in the fridge until ready to use.
Sourdough Breadcrumbs
  1. Pulse the bread in a food processor until mostly fine (it's okay if there are some bigger pieces).
  2. Melt butter in a pan with the olive oil on medium low heat.
  3. Add in the garlic clove and breadcrumbs and season with kosher salt.
  4. Continue tossing in the pan for about 8-10 minutes until the breadcrumbs are dark golden brown and crisp.
  5. If the pan looks a little dry, add in more olive oil.
  6. Remove the golden breadcrumbs to a paper towel line plate and let them come to room temperature.
Salad
  1. Add the mixed greens to a large mixing bowl along with the feta and radish slices.
  2. Pour in some dressing (you won't need to use all of it) and toss together.
  3. Season with kosher salt and black pepper to taste.
  4. To serve, place the dressed greens down first then top with the sourdough breadcrumbs, a drizzle of olive oil, chopped chives and chopped dill.
