Herby Garlic Parmesan Meatball Sliders

Ingredients
Meatballs
- 1 pound Ground Beef (80/20)
- 1 pound Ground Pork
- 5 Garlic Cloves, minced
- 1 cup Yellow Onion, Diced
- 1/3 cup Basil, chopped
- 1/3 cup Parsley, chopped
- 1/3 cup Parmesan Cheese, grated
- 1/4 cup Italian Breadcrumbs
- 1/4 cup Milk
- 2 Eggs
- 1 tsp Kosher Salt
- 1/2 tsp Red Pepper Flakes (optional)
- Black Pepper
- Olive Oil
- 24 ounces Marinara Sauce
Herby Garlic Butter
- 12 TB Unsalted Butter
- 1/2 tsp Kosher Salt
- 1/4 cup Basil, chopped
- 1/4 cup Parsley, chopped
- 10-12 Garlic Cloves, grated
Assembly
- 12 Potato Slider Buns
- 12 oz Low Moisture Mozzarella Cheese, grated
- 1/4 cup Parmesan Cheese, grated
Instructions
Meatballs
- Preheat the oven to 400F.
- Soak breadcrumbs in milk for a few minutes until the milk has fully absorbed into the breadcrumbs.
- In a pan over medium low heat, sweat down onion and garlic in a little olive oil until translucent.
- Allow the onions and garlic to cool a bit, then add all ingredients to a large mixing bowl with a some freshly cracked black pepper.
- Combine all ingredients together, being careful not to over mix.
- Form mixture into about 24 meatballs (about 2 TB per meatball) and place on a parchment or tin foil lined baking sheet.
- Bake in the oven for 20 minutes.
- While the meatballs are baking, add the marinara sauce to a large pot and bring to a simmer.
- Once the meatballs are out of the oven, place them in the sauce and keep warm.
Herby Garlic Butter
- Melt butter in a small pot and add in garlic.
- Simmer for about 3-5 minutes then remove from heat and in salt and herbs.
Assembly
- Keep the oven on at 400F.
- Brush insides of the buns and outside top bun with the herby garlic butter and place them all out onto a sheet tray.
- Toast in the oven for about 7 minutes.
- Once the buns are out of the oven, switch the oven on to broil.
- To assemble the sliders, place some mozzarella cheese on the bottom bun, then two meatballs on top with a little extra sauce. Add some more cheese on the inside of the top bun and then pop everything under the broiler until the cheese in melted.
- Sprinkle with a little parmesan cheese over the meatballs, close the sliders then brush the tops with more herby garlic butter and a final sprinkle of parmesan.
