Indian Spiced Lentil Soup

Indian Spiced Lentil Soup

Ingredients

  • 1 Yellow Onion, diced
  • 2 Roma Tomatoes, chopped
  • 2 Jalapeño, diced (seeds removed if you don't want it too spicy)
  • 4 Carrots, peeled and chopped
  • 3 Garlic Cloves, chopped
  • 1 inch knob Ginger
  • 2 Bay Leaves
  • 1 tsp Turmeric
  • 1 tsp Garam Masala
  • 1/2 tsp Cumin
  • 1/2 tsp Coriander
  • 8 oz Red Lentils (about 1 1/4 cups)
  • 4 cups Vegetable Stock
  • 1 - 14 oz can Coconut Milk
  • 1 Lime, zested and juiced
  • Kosher Salt, to taste
  • Olive Oil
  • Cilantro, Lime Wedges, and Sour Cream for garnish

Instructions

  1. Heat a large pot to medium heat with a couple TB of olive oil.
  2. Add in onion, jalapeño and tomato and saute for about 5 minutes.
  3. Add in carrots, garlic, ginger, bay leaves and spices and toss together for a minute or two.
  4. Add in lentils and vegetable stock.
  5. Cover and bring to a simmer for about 30 minutes until the lentils are very tender.
  6. Use an immersion blender or transfer soup to a regular blender to blend the ingredients until smooth.
  7. Stir in coconut milk, lime juice, and season with kosher salt to taste.
  8. To serve, top with a drizzle of olive oil, sour cream, lime squeeze, and cilantro.
