Indian Spiced Lentil Soup

Ingredients
- 1 Yellow Onion, diced
- 2 Roma Tomatoes, chopped
- 2 Jalapeño, diced (seeds removed if you don't want it too spicy)
- 4 Carrots, peeled and chopped
- 3 Garlic Cloves, chopped
- 1 inch knob Ginger
- 2 Bay Leaves
- 1 tsp Turmeric
- 1 tsp Garam Masala
- 1/2 tsp Cumin
- 1/2 tsp Coriander
- 8 oz Red Lentils (about 1 1/4 cups)
- 4 cups Vegetable Stock
- 1 - 14 oz can Coconut Milk
- 1 Lime, zested and juiced
- Kosher Salt, to taste
- Olive Oil
- Cilantro, Lime Wedges, and Sour Cream for garnish
Instructions
- Heat a large pot to medium heat with a couple TB of olive oil.
- Add in onion, jalapeño and tomato and saute for about 5 minutes.
- Add in carrots, garlic, ginger, bay leaves and spices and toss together for a minute or two.
- Add in lentils and vegetable stock.
- Cover and bring to a simmer for about 30 minutes until the lentils are very tender.
- Use an immersion blender or transfer soup to a regular blender to blend the ingredients until smooth.
- Stir in coconut milk, lime juice, and season with kosher salt to taste.
- To serve, top with a drizzle of olive oil, sour cream, lime squeeze, and cilantro.
