Italian-Style Chopped Salad

I probably eat this salad once a week. It has all the good stuff in it, and makes you feel like you are indulging while still eating a salad.

Italian-Style Chopped Salad

Ingredients
Salad
- 2 heads of Romaine, chopped
- 1/2 cup Pepperoncini, chopped
- 1/2 cup Olives, chopped
- 1 cup Salami or Pepperoni, chopped
- 1 Bell Pepper, chopped
- 1/4 Red Onion, sliced thin
- 1 cup Provolone Cheese, sliced and chopped
- 1 cup Cucumber, chopped
- 1/4 cup Parmesan
Dressing
- 1/4 cup Red Wine Vinegar
- 1/4 cup Olive Oil
- 1 tsp Dijon Mustard
- Kosher Salt, to taste
- Black Pepper, to taste
Instructions
- For the dressing, add all ingredients to a mason jar and shake until combined.
- Toss all salad ingredients with the dressing.
- Season salad with salt and pepper to taste.
