Italian-Style Chopped Salad

I probably eat this salad once a week. It has all the good stuff in it, and makes you feel like you are indulging while still eating a salad.

Italian-Style Chopped Salad

Ingredients

Salad
  • 2 heads of Romaine, chopped
  • 1/2 cup Pepperoncini, chopped
  • 1/2 cup Olives, chopped
  • 1 cup Salami or Pepperoni, chopped
  • 1 Bell Pepper, chopped
  • 1/4 Red Onion, sliced thin
  • 1 cup Provolone Cheese, sliced and chopped
  • 1 cup Cucumber, chopped
  • 1/4 cup Parmesan
Dressing
  • 1/4 cup Red Wine Vinegar
  • 1/4 cup Olive Oil
  • 1 tsp Dijon Mustard
  • Kosher Salt, to taste
  • Black Pepper, to taste

Instructions

  1. For the dressing, add all ingredients to a mason jar and shake until combined.
  2. Toss all salad ingredients with the dressing.
  3. Season salad with salt and pepper to taste.
