Italian-Style Sub with Olive Tapenade

The most beautiful sandwich there ever was.

Italian-Style Sub with Olive Tapenade

Olive Tapenade
  • 1 cup Mixed Olives
  • 1 TB Capers
  • 1/4 cup Parsley
  • 4-5 Sweet Piquante Peppers (or cherry peppers)
  • 1/2 Lemon, juiced and zested
  • 1/4 tsp Anchovy Paste
  • 1 Garlic Clove, confit or raw
  • 1/4 cup Olive Oil
Remaining Ingredients
  • 6 inch - Italian Loaf or French Baguette
  • 2 oz Salami, sliced
  • 2 oz Mortadella, sliced
  • 2 oz Ham, sliced
  • 3 oz Fresh Mozzarella, sliced
  • 1 cup Fresh Arugula (lightly packed)
  • 1 TB Red Wine Vinegar
  • 1 TB Olive Oil
  • Black Pepper


  1. Combine all tapenade ingredients (except olive oil) in a food processor.
  2. Pulse until combined, then slowly drizzle in olive oil.
  3. Spread tapenade on both sides of the bread.
  4. Layer the ham, salami, mortadella, mozzarella, and arugula on top.
  5. Drizzle with olive oil and red wine vinegar and freshly cracked black pepper.
