Kofta Kebab Skewers

Kofta is a ground meat dish with many variations throughout the Middle East and India. I love serving this dish on a platter with dips, sauces and fresh chopped veggies.

Kofta Kebab Skewers

Ingredients
- 3/4 pound Ground Beef (80/20)
- 3/4 pound Ground Lamb
- 1 Yellow Onion, diced
- 4 Garlic Cloves, minced
- 1/2 cup Fresh Parsley, chopped
- 1/4 cup Fresh Mint, chopped
- 1/4 tsp Cinnamon
- 1 tsp Coriander
- 1 tsp Cumin
- 1 tsp Red Pepper Flakes
- 2 tsp Kosher Salt
- 1 tsp Paprika
- 1/4 tsp Nutmeg
- Avocado or Olive Oil
- Wooden Skewers, soaked for 30 minutes in water
Instructions
- Sauté onion and garlic with a little oil in a pan for 5 minutes, or until soft.
- Allow to cool a bit then transfer to a mixing bowl with the remaining ingredients.
- Combine mixture, careful not to over mix.
- Form a small handful of the meat mixture in a long shape around each skewer.
- Heat oven to 400F.
- Bring a pan to medium-high heat with some oil.
- Sear the skewers on all sides in the pan until browned (about one per side).
- Transfer to a tin foil lined baking sheet to finish cooking in the oven (about 5-7 minutes).
