Kofta Kebab Skewers

Kofta is a ground meat dish with many variations throughout the Middle East and India. I love serving this dish on a platter with dips, sauces and fresh chopped veggies.

Kofta Kebab Skewers

Ingredients

  • 3/4 pound Ground Beef (80/20)
  • 3/4 pound Ground Lamb
  • 1 Yellow Onion, diced
  • 4 Garlic Cloves, minced
  • 1/2 cup Fresh Parsley, chopped
  • 1/4 cup Fresh Mint, chopped
  • 1/4 tsp Cinnamon
  • 1 tsp Coriander
  • 1 tsp Cumin
  • 1 tsp Red Pepper Flakes
  • 2 tsp Kosher Salt
  • 1 tsp Paprika
  • 1/4 tsp Nutmeg
  • Avocado or Olive Oil
  • Wooden Skewers, soaked for 30 minutes in water 

Instructions

  1. Sauté onion and garlic with a little oil in a pan for 5 minutes, or until soft. 
  2. Allow to cool a bit then transfer to a mixing bowl with the remaining ingredients.
  3. Combine mixture, careful not to over mix.
  4. Form a small handful of the meat mixture in a long shape around each skewer.
  5. Heat oven to 400F.
  6. Bring a pan to medium-high heat with some oil.
  7. Sear the skewers on all sides in the pan until browned (about one per side).
  8. Transfer to a tin foil lined baking sheet to finish cooking in the oven (about 5-7 minutes).
