Marinated Lamb Chops with Mint & Cilantro Chimichurri

These lamb chops are surprisingly simple to make and the marinate adds so much flavor. This mint chimichurri is my favorite condiment to serve with them.

Ingredients
Lamb Chops and Marinade
- 1 pound Lamb Chops (8 single lamb chops)
- 1 cup Cilantro
- 1/2 cup Fresh Mint
- 1/2 cup Fresh Parsley
- 1 small Shallot (half of a medium sized)
- 2 Garlic Cloves
- 1/2 cup Avocado Oil or Vegetable oil
- 1 tsp Ground Cumin
- 1 tsp Paprika
- 1 tsp Coriander
- 1 tsp Oregano
- Kosher salt
Mint and Cilantro Chimichurri
- 1 cup Fresh Mint
- 1 cup Cilantro
- 1/2 cup Olive Oil
- 1/2 small Shallot
- 1 Garlic Clove
- 2 TB Red Wine Vinegar
- Kosher Salt
Instructions
Lamb Chops
- To marinate the lamb, combine all marinade ingredients in food processor or blender and process until smooth.
- Coat the lamb chops in the marinade and store in the fridge for at least 2 hours to overnight.
- Remove the lamb chops from the fridge, bring to room temperature, then season the lamb chops with kosher salt.
- Bring a stainless steel or cast iron pan to high heat with some oil.
- Sear lamb chops on both sides for about 2-3 minutes per side for medium rare.
- Let them rest for a few minutes and serve with chimichurri sauce.
Mint and Cilantro Chimichurri
- Blend together ingredients in a blender or food processor.
- Season with salt to taste.
