Marinated Ribeye Skewers

Salty and juicy ribeye pairs perfectly with this tangy slightly sweet sauce and marinade. This is a great recipe for the grill or indoors.

Marinated Ribeye Skewers

Ingredients

  • 2 pounds Ribeye, cut into 2 inch cubes
  • 3 Garlic Cloves, sliced
  • 1/2 Red Onion, chopped
  • 1 cup Scallions, chopped
  • 1 cup Pickled Piquante or Cherry Peppers
  • 1 cup Parsley
  • 1 cup Cilantro
  • 1/4 cup Red Wine Vinegar
  • 1 tsp Dijon
  • 1/2 cup Olive Oil
  • Kosher Salt
  • Avocado Oil
  • Wooden Skewers, soaked for at least 30 minutes prior to cooking

Instructions

  1. Sauté onion, scallions and garlic in a pan with olive oil for 5 minutes until softened.
  2. Allow to cool then add to a blender with pickled peppers, parsley, cilantro, red wine vinegar, dijon and olive oil.
  3. Blend until smooth and pour half of the marinade over the ribeye. (no salt has been added to the marinade yet)
  4. Marinate for 4 hours to overnight in the fridge.
  5. Take the remaining marinade and season with salt, this is now the sauce for the steak. If it's too thick add a little bit of water to thin it out.
  6. Once the ribeye is marinated, skewer the pieces and season with salt on all sides.
  7. Heat a pan to medium-high heat with a little avocado oil.
  8. Sear the skewers on all sides (about 2 minutes per side).
  9. Top the skewers with the sauce and serve.

Notes:

If you can't find the pickled peppers, add 1 cup of chopped red pepper with 1 tsp sugar.
