Marinated Ribeye Skewers

Salty and juicy ribeye pairs perfectly with this tangy slightly sweet sauce and marinade. This is a great recipe for the grill or indoors.

Marinated Ribeye Skewers

Ingredients
- 2 pounds Ribeye, cut into 2 inch cubes
- 3 Garlic Cloves, sliced
- 1/2 Red Onion, chopped
- 1 cup Scallions, chopped
- 1 cup Pickled Piquante or Cherry Peppers
- 1 cup Parsley
- 1 cup Cilantro
- 1/4 cup Red Wine Vinegar
- 1 tsp Dijon
- 1/2 cup Olive Oil
- Kosher Salt
- Avocado Oil
- Wooden Skewers, soaked for at least 30 minutes prior to cooking
Instructions
- Sauté onion, scallions and garlic in a pan with olive oil for 5 minutes until softened.
- Allow to cool then add to a blender with pickled peppers, parsley, cilantro, red wine vinegar, dijon and olive oil.
- Blend until smooth and pour half of the marinade over the ribeye. (no salt has been added to the marinade yet)
- Marinate for 4 hours to overnight in the fridge.
- Take the remaining marinade and season with salt, this is now the sauce for the steak. If it's too thick add a little bit of water to thin it out.
- Once the ribeye is marinated, skewer the pieces and season with salt on all sides.
- Heat a pan to medium-high heat with a little avocado oil.
- Sear the skewers on all sides (about 2 minutes per side).
- Top the skewers with the sauce and serve.
Notes:
If you can't find the pickled peppers, add 1 cup of chopped red pepper with 1 tsp sugar.
