Pesto Fried Rice

(Vegetarian, GF)

THIS COMBO. Wow. Who doesn’t love fried rice? And who doesn’t love pesto? Combining these two favorites is a game changer.

Pesto Fried Rice

Prep time: 45 MinCook time: 15 MinTotal time: 1 Hour

Ingredients

  • 2 1/2 cups Jasmine or Basmati Rice, cooked (preferably a day or two old)
  • 1/2 cup Peas
  • 1 cup Corn, cut off the cob
  • 1/2 Yellow Onion, finely diced
  • 1/2 cup Pesto, click here for pesto recipe
  • 1 Lemon, zested and juiced
  • 1/4 cup Basil, chopped
  • 2 Garlic Cloves, minced
  • Olive Oil
  • Kosher Salt
  • Parmesan Cheese, for serving

Instructions

  1. Sauté onion, garlic and corn in a large nonstick pan on medium heat with a little olive oil.
  2. Season the vegetables with salt, and after a couple minutes add in the peas.
  3. Sauté another minute and then remove from the pan and set aside.
  4. Add in a generous drizzle of olive oil and spread the rice evenly in the pan.
  5. Don't touch the rice for a minute and then start tossing it around once it has just started to turn lightly golden.
  6. Add the vegetables back in with the pesto and toss everything together.
  7. Finish the rice with chopped basil, lemon, and season with salt to taste.
  8. Top bowls of rice with a dollop of pesto and grated parmesan.
