Pork and Cabbage Dumplings with Homemade Wrappers

Chewy on the top and crispy on the bottom, filled with juicy pork and cabbage. These dumplings have so much flavor and making the homemade wrappers takes it to the next level.

Pork and Cabbage Dumplings with Homemade Wrappers

Ingredients

Dumpling Wrapper Dough
  • 2 1/4 cups AP Flour
  • 3/4 cup Hot Water
Dumpling Filling
  • 1/2 pound Ground Pork
  • 1/2 cup Scallions, chopped
  • 2 TB Soy Sauce
  • 1/2 tsp Sesame Oil
  • 1/2 tsp Kosher Salt
  • 1/2 tsp Garlic, minced
  • 1/2 tsp Ginger, grated
  • 1 tsp Cornstarch
  • 2 cups Cabbage, finely chopped

Instructions

Dumpling Wrapper Dough
  1. Combine ingredients in a bowl using your hands until it comes together.
  2. Once it forms a ball knead the dough for a few minutes until smooth.
  3. Wrap in plastic wrap and rest for 15 minutes.
  4. Remove plastic wrap and knead again for about 5 minutes until the dough is very smooth.
  5. Wrap in plastic wrap and rest for 30 minutes at room temperature.
  6. Punch down a hole in the center of the dough with your thumb and shape into a large ring, pulling out the dough until it has a large hole in the center.
  7. Cut through a section of the dough so it's now a long rope.
  8. Cut off pieces of dough, about 10-12 grams each.
  9. Keep the dough covered under a towel or plastic wrap so it doesn't dry out while rolling the wrappers.
  10. Using a rolling pin, roll out each piece of dough into a circle to create the dumpling wrappers.
  11. Layer each piece with generous amounts of flour so the wrappers don't stick together.
Dumpling Filling and Assembly
  1. Combine dumpling filling ingredients together.
  2. Scoop about 1 TB of filling in the center of the dumpling wrappers.
  3. Pinch the seams together to form a half moon shape and flatten the bottom out.
  4. Once the dumplings are filled, heat a pan to medium heat with some oil.
  5. Sear the flat bottom of the dumplings until golden.
  6. Carefully pour in about 1/4 cup water in the pan and cover to steam the dumplings until they are cooked through (about 5 minutes).
