Queso Fundido with Chorizo and Poblanos

Ingredients
- 8oz Monterey Jack Cheese, grated
- 8 oz Chorizo Sausage, casings removed
- 2 oz Queso Fresco, crumbled
- 2 Poblano Peppers, skin and seeds removed, diced
- 2 Jalapeños, diced
- 1/2 Yellow Onion, diced
- 2 Garlic Cloves, minced
- 1/8 cup Cilantro, chopped
- Lime Wedges for serving
Instructions
- Heat a cast iron skillet to medium heat with a little oil.
- Brown the chorizo, breaking it up into small pieces.
- Once the chorizo is cooked through, remove from the pan.
- Add in onion, garlic and both peppers.
- Season with salt and sauté for about 5 minutes.
- Remove onion, garlic and peppers.
- Turn the heat off and now turn on the oven broiler.
- Layer the ingredients in the cast iron skillet.
- First Monterey cheese, then pepper mixture, then chorizo and repeat again.
- Reserve the queso fresco and a little bit of Monterey cheese for the topping.
- Place under the broiler until the cheese is melted and bubbly.
- Finish with chopped cilantro and a squeeze of lime.
- Serve with warm tortillas or tortilla chips.
