Queso Fundido with Chorizo and Poblanos

Melted bubbly cheese and spicy chorizo. What’s not to love about Queso Fundido?

Queso Fundido with Chorizo and Poblanos

Ingredients

  • 8oz Monterey Jack Cheese, grated
  • 8 oz Chorizo Sausage, casings removed
  • 2 oz Queso Fresco, crumbled
  • 2 Poblano Peppers, skin and seeds removed, diced
  • 2 Jalapeños, diced
  • 1/2 Yellow Onion, diced
  • 2 Garlic Cloves, minced
  • 1/8 cup Cilantro, chopped
  • Lime Wedges for serving

Instructions

  1. Heat a cast iron skillet to medium heat with a little oil.
  2. Brown the chorizo, breaking it up into small pieces.
  3. Once the chorizo is cooked through, remove from the pan.
  4. Add in onion, garlic and both peppers.
  5. Season with salt and sauté for about 5 minutes.
  6. Remove onion, garlic and peppers.
  7. Turn the heat off and now turn on the oven broiler.
  8. Layer the ingredients in the cast iron skillet.
  9. First Monterey cheese, then pepper mixture, then chorizo and repeat again.
  10. Reserve the queso fresco and a little bit of Monterey cheese for the topping.
  11. Place under the broiler until the cheese is melted and bubbly.
  12. Finish with chopped cilantro and a squeeze of lime.
  13. Serve with warm tortillas or tortilla chips.
