Roasted Cauliflower with Roasted Pepper White Bean Sauce

Ingredients
Roasted Cauliflower
- 1 Head of Cauliflower, cut into florets
- 1/4 tsp Paprika
- 1/4 tsp Ground Coriander
- 1/4 tsp Turmeric
- Kosher Salt
- Olive Oil
Roasted Pepper White Bean Sauce
- 1 - 15oz can White Beans (any kind will work)
- 3 Roasted Red Peppers (from a jar)
- 1 Lemon, Juiced
- 1 Garlic Clove
- 2 TB Olive Oil
- Kosher Salt to taste
For Garnish
- Fresh Basil, chopped
- Crumbled Feta
- Toasted Pumpkin Seeds
- Lemon Wedges
- Maldon Salt
Instructions
- Heat oven to 450F.
- Toss cauliflower with spices, salt and drizzle of olive oil.
- Spread onto a tin foil lined baking sheet.
- Roast for about 10-15 minutes.
- Puree sauce ingredients in a food processor until smooth.
- Plate cauliflower with sauce and top with feta, pumpkin seeds, basil, drizzle of lemon and sprinkle of Maldon salt.
