Roasted Cauliflower with Roasted Pepper White Bean Sauce

This is such a fresh and flavorful veggie recipe. By adding the right ingredients, it creates a beautiful dish with tons of colors and textures.

Roasted Cauliflower with Roasted Pepper White Bean Sauce

Roasted Cauliflower
  • 1 Head of Cauliflower, cut into florets
  • 1/4 tsp Paprika
  • 1/4 tsp Ground Coriander
  • 1/4 tsp Turmeric
  • Kosher Salt
  • Olive Oil
Roasted Pepper White Bean Sauce
  • 1 - 15oz can White Beans (any kind will work)
  • 3 Roasted Red Peppers (from a jar)
  • 1 Lemon, Juiced
  • 1 Garlic Clove
  • 2 TB Olive Oil
  • Kosher Salt to taste
For Garnish
  • Fresh Basil, chopped
  • Crumbled Feta
  • Toasted Pumpkin Seeds
  • Lemon Wedges
  • Maldon Salt


  1. Heat oven to 450F.
  2. Toss cauliflower with spices, salt and drizzle of olive oil.
  3. Spread onto a tin foil lined baking sheet.
  4. Roast for about 10-15 minutes.
  5. Puree sauce ingredients in a food processor until smooth.
  6. Plate cauliflower with sauce and top with feta, pumpkin seeds, basil, drizzle of lemon and sprinkle of Maldon salt.
