Sausage & Garlicky Broccoli Rabe with Pecorino and Chili Oil

Ingredients
- 1 pound Broccoli Rabe, roughly chopped
- 1 1/2 pounds Italian Sausage
- 1 Lemon, juiced
- 2 TB White Wine
- 1/2 to 1 tsp red chili flakes (depending how spicy you want it)
- 5 Garlic Cloves, thinly sliced
- Olive oil
- Kosher salt
- Pecorino Cheese, for serving
- Chili Oil, for serving
Instructions
- Brown sausage in a pan with some olive oil over medium heat.
- Once the sausage is just about cooked through, remove it from the pan and set aside.
- Lower the heat to medium low, add in another drizzle of olive oil and the garlic and red pepper flakes. Sauté for a minute.
- Deglaze the pan with white wine and let that cook down for a minute, scraping up any bits in the bottom of the pan.
- Add the broccoli rabe in the pan along with the sausage and sauté until the broccoli rabe has wilted and the sausage is cooked through.
- Finish with lemon juice and season with kosher salt to taste.
- To serve, top with grated pecorino and a drizzle of chili oil.
