Shredded Kale Salad with Avocado Lime Dressing

(Vegetarian, GF)

This salad dressing goes great with just about anything. Use it for the obvious salads or add it to tacos, chicken or serve it as a dip.

Shredded Kale Salad with Avocado Lime Dressing

  • 1/2 Avocado
  • 1/4 cup Greek Yogurt
  • 2 Limes, zested and juiced
  • 1 Garlic Clove
  • 1/3 cup Water
  • 1 cup Cilantro
  • 1/2 tsp Kosher Salt
  • 4 cups Kale, Shredded
  • 2 cups Romaine, Shredded
  • 1 cup Radish, chopped
  • 1 cup Pumpkin Seeds, toasted
  • 1 cup Cotija Cheese, crumbled or grated


  1. Blend dressing ingredients together.
  2. Toss together dressing with salad ingredients and season with kosher salt.
