Southwestern Style Halibut Salad with Chipotle Lime Dressing

Ingredients

Salad
  • 4 cups Romaine, shredded
  • 2 cups Red Cabbage, shredded
  • 1/2 cup Radish, sliced thin
  • 2 Bell Peppers, diced
  • 1 cup Fried Corn Tortillas Strips
  • 1/2 cup Avocado, diced
  • 1/2 cup Red Onion, diced
  • 1/2 cup Tomato, diced
  • 1/2 cup Mango, diced
  • 1 Lime, juiced
  • Kosher Salt
  • Olive Oil
Chipotle Lime Dressing
  • 1/3 cup Sour Cream
  • 1 Lime, zested and juiced
  • 2 TB Chipotle Sauce
  • Kosher Salt, to taste
Halibut
  • 1 pound Halibut, cut into 2 inch pieces
  • 1 tsp Paprika
  • 1 tsp Cumin
  • 1 tsp Kosher Salt
  • 1 tsp Chili Powder
  • 1 tsp Oregano
  • 1 tsp Coriander
  • Avocado Oil

Instructions

  1. To prepare halibut, mix together the spices and toss with the halibut.
  2. Heat a pan to medium high heat with some avocado oil.
  3. Sear fish on all sides until cooked through, about 1 minute per side.
  4. Once halibut is cooked, set aside to prepare the salad.
  5. Toss mango, tomato, and red onion together and season with kosher salt and lime juice to taste.
  6. Toss together romaine and cabbage and season lightly with olive oil, kosher salt and lime juice.
  7. For the dressing, whisk together sour cream, chipotle sauce and lime juice. Season with kosher salt to taste and thin out with a splash of water.
  8. Toss all ingredients together and serve halibut on top with a drizzle of chipotle dressing.
