Southwestern Style Halibut Salad with Chipotle Lime Dressing

Ingredients
Salad
- 4 cups Romaine, shredded
- 2 cups Red Cabbage, shredded
- 1/2 cup Radish, sliced thin
- 2 Bell Peppers, diced
- 1 cup Fried Corn Tortillas Strips
- 1/2 cup Avocado, diced
- 1/2 cup Red Onion, diced
- 1/2 cup Tomato, diced
- 1/2 cup Mango, diced
- 1 Lime, juiced
- Kosher Salt
- Olive Oil
Chipotle Lime Dressing
- 1/3 cup Sour Cream
- 1 Lime, zested and juiced
- 2 TB Chipotle Sauce
- Kosher Salt, to taste
Halibut
- 1 pound Halibut, cut into 2 inch pieces
- 1 tsp Paprika
- 1 tsp Cumin
- 1 tsp Kosher Salt
- 1 tsp Chili Powder
- 1 tsp Oregano
- 1 tsp Coriander
- Avocado Oil
Instructions
- To prepare halibut, mix together the spices and toss with the halibut.
- Heat a pan to medium high heat with some avocado oil.
- Sear fish on all sides until cooked through, about 1 minute per side.
- Once halibut is cooked, set aside to prepare the salad.
- Toss mango, tomato, and red onion together and season with kosher salt and lime juice to taste.
- Toss together romaine and cabbage and season lightly with olive oil, kosher salt and lime juice.
- For the dressing, whisk together sour cream, chipotle sauce and lime juice. Season with kosher salt to taste and thin out with a splash of water.
- Toss all ingredients together and serve halibut on top with a drizzle of chipotle dressing.
