Spicy Thai Green Curry with Shrimp
I love a Thai curry. This simple green curry with vegetables and shrimp is the perfect balance of spicy and comforting.

Spicy Thai Green Curry with Shrimp

Ingredients
- 1/2 Yellow Onion, diced
- 3 Garlic Cloves, minced
- 1/2 inch knob Ginger, grated
- 1/3 cup Thai Green Curry Paste
- 2 - 15.5oz cans Coconut Milk (4 cups)
- 1 cup Chicken Stock
- 2 cups Broccoli Florets
- 1 cup Snow Peas, halved
- 2 cups Bell Pepper, sliced
- 1 pound Shrimp, peeled and deveined
- 1 Lime, zested and juiced
- 1 TB Granulated Sugar
- 1 tsp Fish Sauce
- 1 TB Soy Sauce
- Kosher Salt
- Olive Oil
- Cilantro and Basil, for garnish
- Crushed Roasted Peanuts, for garnish
- Sliced Jalapeños, optional for garnish
Instructions
- Sauté onion, garlic, ginger, a pinch of salt in olive oil on medium-low heat for a few minutes.
- Add in curry paste and cook down for another minute.
- Pour in coconut milk and chicken stock.
- Bring to a boil and then simmer for about 15 minutes uncovered.
- Add in sugar, soy sauce, and fish sauce. Season with salt to taste.
- Add in peppers and simmer for a few minutes.
- Add in snow peas, broccoli, and shrimp and simmer on low heat until shrimp is cooked through. About 3-5 minutes.
- Finish with lime juice, and add more salt if needed.
- Serve with steamed rice and top with cilantro, basil, peanuts, and jalapeños.
