Spicy Thai Green Curry with Shrimp

I love a Thai curry. This simple green curry with vegetables and shrimp is the perfect balance of spicy and comforting.

Spicy Thai Green Curry with Shrimp

Ingredients

  • 1/2 Yellow Onion, diced
  • 3 Garlic Cloves, minced
  • 1/2 inch knob Ginger, grated
  • 1/3 cup Thai Green Curry Paste
  • 2 - 15.5oz cans Coconut Milk (4 cups)
  • 1 cup Chicken Stock
  • 2 cups Broccoli Florets
  • 1 cup Snow Peas, halved
  • 2 cups Bell Pepper, sliced
  • 1 pound Shrimp, peeled and deveined
  • 1 Lime, zested and juiced
  • 1 TB Granulated Sugar
  • 1 tsp Fish Sauce
  • 1 TB Soy Sauce
  • Kosher Salt
  • Olive Oil
  • Cilantro and Basil, for garnish
  • Crushed Roasted Peanuts, for garnish
  • Sliced Jalapeños, optional for garnish

Instructions

  1. Sauté onion, garlic, ginger, a pinch of salt in olive oil on medium-low heat for a few minutes.
  2. Add in curry paste and cook down for another minute.
  3. Pour in coconut milk and chicken stock.
  4. Bring to a boil and then simmer for about 15 minutes uncovered.
  5. Add in sugar, soy sauce, and fish sauce. Season with salt to taste.
  6. Add in peppers and simmer for a few minutes.
  7. Add in snow peas, broccoli, and shrimp and simmer on low heat until shrimp is cooked through. About 3-5 minutes.
  8. Finish with lime juice, and add more salt if needed.
  9. Serve with steamed rice and top with cilantro, basil, peanuts, and jalapeños.
