Sun-Dried Tomato & Feta Chicken Meatballs

Ingredients

  • 1 pound Ground Chicken
  • 1 cup Feta, crumbled
  • 1/4 cup Sun-dried Tomatoes
  • 1 Lemon, zested and juiced
  • 1 cup Yellow Onion, diced
  • 2 Garlic Cloves, minced
  • 1 tsp Dried Oregano
  • 1/4 cup Parsley, chopped
  • 1 Egg
  • 1/4 cup Breadcrumbs
  • 1/4 cup Milk
  • 1 tsp Kosher Salt
  • Olive Oil

Instructions

  1. Preheat oven to 400F.
  2. Combine milk and breadcrumbs and set aside until the milk is fully absorbed.
  3. Sauté onions and garlic with a little olive oil for a few minutes, then add to a large mixing bowl with the soaked breadcrumbs and remaining ingredients.
  4. Combine all ingredients and form into meatballs.
  5. Heat a pan to medium heat with some olive oil and sear meatballs on all sides.
  6. Transfer seared meatballs to a sheet pan and finish cooking in the oven until cooked through - about 7 minutes.
