Sun-Dried Tomato & Feta Chicken Meatballs

Ingredients
- 1 pound Ground Chicken
- 1 cup Feta, crumbled
- 1/4 cup Sun-dried Tomatoes
- 1 Lemon, zested and juiced
- 1 cup Yellow Onion, diced
- 2 Garlic Cloves, minced
- 1 tsp Dried Oregano
- 1/4 cup Parsley, chopped
- 1 Egg
- 1/4 cup Breadcrumbs
- 1/4 cup Milk
- 1 tsp Kosher Salt
- Olive Oil
Instructions
- Preheat oven to 400F.
- Combine milk and breadcrumbs and set aside until the milk is fully absorbed.
- Sauté onions and garlic with a little olive oil for a few minutes, then add to a large mixing bowl with the soaked breadcrumbs and remaining ingredients.
- Combine all ingredients and form into meatballs.
- Heat a pan to medium heat with some olive oil and sear meatballs on all sides.
- Transfer seared meatballs to a sheet pan and finish cooking in the oven until cooked through - about 7 minutes.
