Tuna Tartare Tostada with Chipotle Mayonnaise

Chipotle Mayonnaise
  • 2 TB Chipotle Sauce
  • 1/3 cup Mayonnaise
  • 1/2 Lime, juiced
  • Kosher Salt
Tuna and Assembly
  • 1/2 pound Sashimi Grade Tuna, diced
  • 2 TB Soy Sauce
  • 1 tsp Rice Vinegar
  • 1 tsp Sesame Oil
  • 2 tsp Sesame Seeds
  • 1/4 cup Scallions, chopped
  • 6 small Corn Tortillas
  • 1/2 tsp Chili Powder
  • 2 cups Vegetable Oil, for frying
  • 1 Avocado, mashed
  • 1/2 of a Lime, zested and juiced
  • Jalapeños, sliced for garnish
  • Kosher Salt


Chipotle Mayonnaise
  1. Whisk together ingredients and season with kosher salt to taste.
Tuna and Assembly
  1. Heat oil in a pan to 350F.
  2. Fry corn tortillas until golden and crisp, about 1 minute per side.
  3. Remove to a paper towel lined plate and sprinkle with kosher salt and chili powder.
  4. Combine tuna, soy sauce, rice vinegar, sesame oil, sesame seeds and scallions.
  5. Combine mashed avocado and lime juice and zest and season with kosher salt to taste.
  6. To assemble, place avocado down on the fried tortillas, then top with the tuna, chipotle mayo and sliced jalapeños.
