Tuna Tartare Tostada with Chipotle Mayonnaise

Ingredients
Chipotle Mayonnaise
- 2 TB Chipotle Sauce
- 1/3 cup Mayonnaise
- 1/2 Lime, juiced
- Kosher Salt
Tuna and Assembly
- 1/2 pound Sashimi Grade Tuna, diced
- 2 TB Soy Sauce
- 1 tsp Rice Vinegar
- 1 tsp Sesame Oil
- 2 tsp Sesame Seeds
- 1/4 cup Scallions, chopped
- 6 small Corn Tortillas
- 1/2 tsp Chili Powder
- 2 cups Vegetable Oil, for frying
- 1 Avocado, mashed
- 1/2 of a Lime, zested and juiced
- Jalapeños, sliced for garnish
- Kosher Salt
Instructions
Chipotle Mayonnaise
- Whisk together ingredients and season with kosher salt to taste.
Tuna and Assembly
- Heat oil in a pan to 350F.
- Fry corn tortillas until golden and crisp, about 1 minute per side.
- Remove to a paper towel lined plate and sprinkle with kosher salt and chili powder.
- Combine tuna, soy sauce, rice vinegar, sesame oil, sesame seeds and scallions.
- Combine mashed avocado and lime juice and zest and season with kosher salt to taste.
- To assemble, place avocado down on the fried tortillas, then top with the tuna, chipotle mayo and sliced jalapeños.
