Braised Beef and Provolone Hoagie

Tender beef dripping in a savory sauce with melty provolone cheese on a buttered roll. Is your mouth watering yet?

Braised Beef and Provolone Hoagie

Ingredients

  • 3 pounds Beef Chuck Roast
  • 1 Yellow Onion, sliced
  • 1 Bell Pepper, sliced
  • 1/2 Jar Pepperoncini, sliced with the juice
  • 1 Head of Garlic, cut in half
  • 2 Sprigs Rosemary
  • 2 Sprigs Thyme
  • 2 cups Beef Stock, low sodium/unsalted
  • Kosher Salt
  • Pepper
  • Avocado oil
Assembly
  • Hoagie Rolls (for a great homemade option, click here)
  • Butter
  • Provolone Cheese, sliced or grated

Instructions

  1. Preheat oven to 315F.
  2. Pat beef chuck dry with paper towels and season liberally with salt and pepper.
  3. Heat large pot or dutch oven to high heat with avocado oil.
  4. Sear beef on a sides until a crust forms (about 3 minutes per side).
  5. Place onion and peppers around the beef chuck and pour in the pepperoncini slices and juice and beef stock.
  6. Nestle in the garlic, rosemary and thyme.
  7. Cover the pot and place in the oven for about 3 hours, until beef is tender and falling apart.
  8. Once the beef is out of the oven, allow to rest covered for about 30 minutes.
  9. Shred beef with forks and and assemble sandwiches.
  10. Butter the inside of hoagie rolls and toast in a pan.
  11. Layer cheese on toasted rolls and place in the oven to melt.
  12. Top with shredded beef.
