Braised Beef and Provolone Hoagie

Ingredients
- 3 pounds Beef Chuck Roast
- 1 Yellow Onion, sliced
- 1 Bell Pepper, sliced
- 1/2 Jar Pepperoncini, sliced with the juice
- 1 Head of Garlic, cut in half
- 2 Sprigs Rosemary
- 2 Sprigs Thyme
- 2 cups Beef Stock, low sodium/unsalted
- Kosher Salt
- Pepper
- Avocado oil
Assembly
- Hoagie Rolls (for a great homemade option, click here)
- Butter
- Provolone Cheese, sliced or grated
Instructions
- Preheat oven to 315F.
- Pat beef chuck dry with paper towels and season liberally with salt and pepper.
- Heat large pot or dutch oven to high heat with avocado oil.
- Sear beef on a sides until a crust forms (about 3 minutes per side).
- Place onion and peppers around the beef chuck and pour in the pepperoncini slices and juice and beef stock.
- Nestle in the garlic, rosemary and thyme.
- Cover the pot and place in the oven for about 3 hours, until beef is tender and falling apart.
- Once the beef is out of the oven, allow to rest covered for about 30 minutes.
- Shred beef with forks and and assemble sandwiches.
- Butter the inside of hoagie rolls and toast in a pan.
- Layer cheese on toasted rolls and place in the oven to melt.
- Top with shredded beef.
