Chicken and Bok Choy Dumplings

Ingredients
Dumpling Filling
- 1 pound Smart Chicken Organic Ground Chicken
- 3 cup Baby Bok Choy, thinly sliced
- 1 cup Scallions, chopped
- 4 TB Low Sodium Soy Sauce
- 1 tsp Kosher Salt
- 1 tsp Ginger, grated
- 1 tsp Garlic, grated
- 1 tsp Corn Starch
Remaining Ingredients
- 48-50 Wonton Wrappers
- Vegetable Oil
- Black Vinegar, Chili Oil, Chopped Chives and Sesame Seeds for serving
Instructions
- Combine dumpling filling ingredients together.
- Scoop about 1 TB of filling in the center of a dumpling wrapper and wet the inside edges with water.
- Bring two opposite corners together at the top and then bring the other two opposite corners together at the top so all four corners are touching.
- Seal each seam together to form a square shape dumpling. Repeat until all of the filling is used up.
- Once the dumplings are filled, heat a pan to medium heat with some oil.
- Sear the flat bottom of the dumplings until golden (about 3-5 minutes).
- Carefully pour in about 1/4 cup water in the pan and quickly cover with a lid to steam the dumplings until they are cooked through (about 5 minutes).
- To serve, drizzle over some black vinegar, chili oil and sprinkle of chopped chives and sesame seeds.
