Chicken Satay Skewers with Peanut Sauce

Chicken satay is one of my go to take out order items and this recipe can easily compete with any of those.

Chicken Satay Skewers with Peanut Sauce

Ingredients

Peanut Sauce
  • 1/4 cup Creamy Peanut Butter
  • 1 tsp Thai Red Curry Paste
  • 1 TB Brown Sugar
  • 1 TB Soy Sauce
  • 1 TB Rice Vinegar
  • 1 Lime, zested and juiced
  • A few TB of water to thin it out
Chicken Satay
  • 1.5-2 pounds Chicken Breasts or Thighs, boneless and skinless, cut into 1 inch pieces
  • 2 TB Soy sauce
  • 2 TB Fish Sauce
  • 2 TB Brown Sugar
  • 1 Lime, zested and juiced
  • 1 tsp Garlic, minced
  • 1 tsp, Ginger, grated
  • 1 tsp Turmeric
  • 1 tsp Coriander
  • Bamboo skewers, soaked in water for 30 minutes prior to use

Instructions

  1. Whisk peanut sauce ingredients together, set aside.
  2. Combine chicken and remaining satay ingredients together in a bowl and cover in the fridge for 30 minutes to 2 hours to marinate.
  3. Skewer the chicken and season lightly with salt.
  4. Heat a pan to medium high heat with some oil and preheat oven to 400F.
  5. Sear chicken in the pan on all sides (about a minute per side).
  6. Transfer to the oven to finish cooking (about 7 minutes).
  7. Serve skewers with peanut sauce.
