Chocolate Walnut Banana Bread

I know you may think the world doesn’t need another banana bread recipe, but I promise you will think again after trying this. In order to get super flavorful and moist banana bread recipe, you need a lot of overripe bananas, which is what this recipe calls for. Just try it and see for yourself.

Chocolate Walnut Banana Bread

Ingredients

  • 2 Eggs
  • 2 cups Granulated Sugar
  • 1/2 cup Vegetable Oil
  • 1 tsp Vanilla Extract
  • 6 Overripe Bananas
  • 2 1/4 cups AP Flour
  • 1 1/2 tsp Baking Powder
  • 1/2 tsp Baking Soda
  • 1 tsp Cinnamon
  • 1/4 tsp Kosher Salt
  • 1 cup Semi-Sweet Chocolate Chips
  • 1 cup Chopped Walnuts

Instructions

  1. Preheat oven to 350F.
  2. Line a large loaf pan with baking spray and parchment paper. Depending on the size of your loaf pan, you may have some extra batter leftover which can be used to make a few muffins. Alternatively, you can divide the batter to make two smaller loaves.
  3. Whisk together eggs, sugar, vegetable oil and vanilla.
  4. Mash bananas with a fork and add to wet ingredients.
  5. In a small bowl mix together flour, baking powder, baking soda, cinnamon, and salt.
  6. Add dry ingredients to wet ingredients and mix until just combined.
  7. Add in chocolate chips and walnuts, mix together and pour into prepared loaf pan. Make sure not to fill the batter all the way to the top of the loaf pan or else it will pour out during the baking process.
  8. Bake for about 60-75 minutes or until a knife comes out clean in the center. Check the loaf after one hour, and then set it for 5 minute intervals until a knife comes out clean in the center.
  9. Once out of the oven, let rest for about 10 minutes then transfer banana bread to a wire rack to cool. The banana bread can be eaten right away, but it's best when enjoyed the following day.
