Crispy Oven Fried Parmesan Potatoes

Potatoes. My one true love. These potatoes are oven-fried, which really is another way to say fried without making yourself feel overly guilty. They get so crispy in the oven and parmesan adds another level of deliciousness.

Crispy Oven Fried Parmesan Potatoes

Ingredients

  • 3 Russet Potatoes, peeled and cut into 1 1/2 inch pieces
  • 2-3 Sprigs of Rosemary
  • 3 Garlic Cloves
  • Kosher Salt
  • Avocado Oil
  • Parmesan Cheese, for garnish

Instructions

  1. Preheat oven to 450 F.
  2. Add diced potatoes to a pot of cold salted water.
  3. Bring to a boil and cook for 2-3 minutes (they shouldn’t be fully cooked at this point).
  4. Strain potatoes and transfer back to the pot.
  5. Put the lid on and vigorously shake the pot so a mashed consistency covers each potato.
  6. Spread the potatoes on a wire cooling rack and let them dry out for about 15 minutes.
  7. Spread potatoes out onto a tin foil lined baking sheet and generously coat with avocado oil and kosher salt. Scatter the garlic cloves and rosemary on top.
  8. Roast until golden brown and crispy, tossing every 15 minutes (about 45 minutes).
  9. Finish with grated parmesan.
