French Onion Soup

Sweet caramelized onions swimming in a flavorful broth covered in crusty bread and gooey melty cheese. What’s not to love?

French Onion Soup

Ingredients
- 4 Large Onions, sliced (half yellow/half sweet)
- 3 TB Unsalted Butter
- 2 Garlic Cloves, minced
- 2 sprigs Fresh Thyme
- 1 Bay Leaf
- 1/2 cup White Wine
- 5 cups Beef Stock
- Kosher Salt
- Black Pepper
- Gruyere Cheese, grated
- 1 inch Baguette Slices (preferably stale)
Instructions
- Heat a large pot to medium heat.
- Add in butter, onions, garlic and season with kosher salt.
- Allow the onions to cook down and caramelize for about 45-50 minutes.
- Every 20 minutes, add a splash of water to release any brown bits on the bottom of the pot.
- Once the onions are golden and caramelized, deglaze the pot with white wine and cook down for a minute.
- Add in thyme, bay leaf, and beef stock.
- Simmer for 15 minutes uncovered and season with kosher salt and black pepper to taste.
- Ladle soup into oven safe bowls.
- Top with bread slices and cover with gruyere cheese.
- Place under the broiler until cheese is melted and bubbling.
