Honey Glazed Carrots with Whipped Feta

Whipped feta is something that should be eaten with pretty much everything, including these honey roasted carrots.

Honey Glazed Carrots with Whipped Feta

Ingredients
- 6oz Feta Cheese
- 7 oz Greek Yogurt
- 1/2 Lemon, zested and juiced
- 1 Garlic Clove
- 3 TB Olive Oil, plus more
- 6 cups Carrots, peeled and diced
- 4 TB Honey
- 1/4 cup Roasted Pistachios, roughly chopped
- Kosher Salt
- Basil and Mint, to garnish
- Preheat oven to 425F.
- To make the whipped feta: combine feta, Greek yogurt, lemon zest and juice, and garlic in a food processor or blender. Blend until smooth and then drizzle in 3 TB of olive oil.
- Toss carrots with a drizzle of olive oil, honey, and salt.
- Spread carrots on to a tin foil lined baking sheet and roast in the oven to about 25 minutes.
- Spread whipped feta down on a plate, drizzle with some olive oil, then the carrots, and top with pistachios and herbs.
