Shrimp Fried Rice

I’ll eat any form of fried rice. This recipe is a simple, yet flavor packed, version I could eat just about any day.

Shrimp Fried Rice

Ingredients
- 4 cups Jasmine Rice, cooked and a day or two old
- 1/2 pound Shrimp, peeled, deveined and chopped
- 2 Garlic Cloves, minced
- 1 cup Scallions, chopped
- 1 cup Cilantro, chopped
- 3 Eggs, whisked
- 1/2 Lime, juiced
- 2 TB Soy Sauce
- 1 TB Fish Sauce
- Vegetable Oil
- Kosher Salt
Instructions
- Sauté shrimp in a little vegetable oil on medium-high heat, with a splash of the soy sauce, for about 30 seconds. (The shrimp will finish cooking with the rice later.)
- Remove the shrimp, wipe out the pan, and add in a couple tablespoons of vegetable oil.
- Flatten the rice in a single layer in the pan and season with salt.
- Leave the rice alone, and once it starts to turn lightly golden, begin tossing it around.
- Push the rice to the sides of the pan to create a hole in the center, drizzle in a little more oil, then pour in the eggs.
- Add the garlic to the eggs and scramble.
- Add shrimp back in along with the remaining soy sauce, fish sauce, lime juice, scallions and cilantro.
- Toss everything together until the shrimp are fully cooked.
