Singapore Style Noodles

Singapore Style Noodles are a Chinese noodle dish that adds curry powder with vegetables, meat, and rice noodles. This is my take on the dish!

Singapore Style Noodles

Ingredients
- 7 oz Rice Vermicelli Noodles (cooked to package instructions and then rinsed with cold water)
- 1 Red Bell Pepper, sliced
- 1 cup Yellow Onion, diced
- 1 cup Carrots, sliced thin
- 1 cup Snow Peas, cut in half
- 1 cup Scallions, chopped
- 2 Eggs, whisked
- 1/2 pound Ground Pork
- 1/2 pound Shrimp, peeled, deveined and chopped
- 3 Garlic Cloves, minced
- 2 TB Soy Sauce
- 2 TB Yellow Curry Powder
- 1 tsp Sesame Oil
- Vegetable Oil
- Kosher salt
Instructions
- Bring a nonstick pan to medium-high heat with a little vegetable oil.
- Add in ground pork, season lightly with salt, and allow it to brown for minute before breaking it up.
- Once the pork begins to brown on the bottom, start breaking it up while it cooks through. Once cooked through, remove it from the pan into a bowl.
- Add in the shrimp and cook for just a minute and then remove from the pan into the bowl with the pork.
- Add in onion, garlic, peppers and carrots to the pan and cook down for a couple minutes.
- Add in snow peas, curry powder, soy sauce and sesame oil.
- Toss everything together and then add the pork and shrimp back in.
- Add in the cooked rice noodles and toss everything together.
- Create a well in the center. Drizzle in a little more oil in the well then pour in the eggs.
- Scramble the eggs, add in the scallions and toss everything together.
- Season with salt to taste.
