Ingredients

  • 7 oz Rice Vermicelli Noodles (cooked to package instructions and then rinsed with cold water)
  • 1 Red Bell Pepper, sliced
  • 1 cup Yellow Onion, diced
  • 1 cup Carrots, sliced thin
  • 1 cup Snow Peas, cut in half
  • 1 cup Scallions, chopped
  • 2 Eggs, whisked
  • 1/2 pound Ground Pork
  • 1/2 pound Shrimp, peeled, deveined and chopped
  • 3 Garlic Cloves, minced
  • 2 TB Soy Sauce
  • 2 TB Yellow Curry Powder
  • 1 tsp Sesame Oil
  • Vegetable Oil
  • Kosher salt

Instructions

  1. Bring a nonstick pan to medium-high heat with a little vegetable oil.
  2. Add in ground pork, season lightly with salt, and allow it to brown for minute before breaking it up.
  3. Once the pork begins to brown on the bottom, start breaking it up while it cooks through. Once cooked through, remove it from the pan into a bowl.
  4. Add in the shrimp and cook for just a minute and then remove from the pan into the bowl with the pork.
  5. Add in onion, garlic, peppers and carrots to the pan and cook down for a couple minutes.
  6. Add in snow peas, curry powder, soy sauce and sesame oil.
  7. Toss everything together and then add the pork and shrimp back in.
  8. Add in the cooked rice noodles and toss everything together.
  9. Create a well in the center. Drizzle in a little more oil in the well then pour in the eggs.
  10. Scramble the eggs, add in the scallions and toss everything together.
  11. Season with salt to taste.
