Spicy Vodka Sauce Pasta

This is hands down the best pasta sauce…ever.

Spicy Vodka Sauce Pasta

Ingredients
- 3 TB Olive Oil
- 1 medium Shallot, diced (about 1/2 cup)
- 3 Garlic Cloves, minced
- 1 tsp Crushed Red Pepper Flakes (cut in half if you don’t want it too spicy)
- 1/2 cup Tomato Paste
- 2 TB Vodka
- 1 1/4 cups Heavy Cream
- Kosher Salt
- 1 pound Pasta
- Grated Parmesan Cheese
- Chopped Basil
Instructions
- Heat olive oil in a large pan over medium-low heat.
- Sauté shallot for 2-3 minutes then add in garlic, crushed red pepper, and a little salt.
- Add in tomato paste and sauté for 5 minutes, until the paste has darkened a bit.
- Pour in vodka and cook down for a minute then stir in heavy cream.
- Simmer for a few minutes and season with kosher salt.
- Boil pasta just a couple minutes under al dente, and reserve a cup or so of pasta water.
- Toss pasta with the sauce, add in a little pasta water until you have a nice glossy sauce and the pasta is al dente. Finish with parmesan cheese and basil.
