Ingredients
- 16 oz Lo Mein Noodles (Twin Marquis brand is my favorite)
- 4 oz Shiitake Mushrooms, sliced
- 2 cups Broccoli Florets
- 1 cup Carrots, julienne
- 1 cup Snow Peas, cut in half
- 2 Garlic Cloves, minced
- 4 TB Soy Sauce
- 2 TB Oyster Sauce
- 1 tsp Sesame Oil
- 1 TB Shaoxing Wine
- 1 tsp Granulated Sugar
- 1 cup Scallions, chopped
- Vegetable oil
- Kosher salt
Instructions
- Bring a large pot of water to a boil.
- Boil the noodles for about 3 minutes then drain and rinse under cold water to get rid of the corn starch the noodles are usually packaged in.
- Bring a pan to high heat with vegetable oil and sauté mushrooms for a few minutes.
- Add in broccoli then after a couple minutes add in carrots and snow peas.
- Season vegetables with kosher salt as they cook down.
- Add in noodles, another drizzle of vegetable oil, and remaining ingredients.
- Toss everything together until the sauce has thickened and coats the noodles.
