Vegetable Lo Mein

You can easily make takeout style lo mein at home. The key is getting the right noodles.

Vegetable Lo Mein

Ingredients

  • 16 oz Lo Mein Noodles (Twin Marquis brand is my favorite)
  • 4 oz Shiitake Mushrooms, sliced
  • 2 cups Broccoli Florets
  • 1 cup Carrots, julienne
  • 1 cup Snow Peas, cut in half
  • 2 Garlic Cloves, minced
  • 4 TB Soy Sauce
  • 2 TB Oyster Sauce
  • 1 tsp Sesame Oil
  • 1 TB Shaoxing Wine
  • 1 tsp Granulated Sugar
  • 1 cup Scallions, chopped
  • Vegetable oil
  • Kosher salt

Instructions

  1. Bring a large pot of water to a boil.
  2. Boil the noodles for about 3 minutes then drain and rinse under cold water to get rid of the corn starch the noodles are usually packaged in.
  3. Bring a pan to high heat with vegetable oil and sauté mushrooms for a few minutes.
  4. Add in broccoli then after a couple minutes add in carrots and snow peas.
  5. Season vegetables with kosher salt as they cook down.
  6. Add in noodles, another drizzle of vegetable oil, and remaining ingredients.
  7. Toss everything together until the sauce has thickened and coats the noodles.
