Zucchini Fritters
(Vegetarian)
These crispy little fritters are simple to make and such a delicious pair with some freshly whipped ricotta.

Zucchini Fritters

Ingredients
- 2 cups Zucchini, grated and drained
- 1 Egg
- 1/3 cup Fresh Basil, chopped
- 1/3 cup Parmesan, grated
- 2 Garlic Cloves, minced
- 1 Lemon, zested and juiced
- 1 tsp Kosher Salt
- 1/2 tsp Black Pepper
- 1/4 cup AP Flour
- Oil for pan frying
- Whipped Ricotta, for serving
Instructions
- Combine ingredients in a large mixing bowl.
- Bring oil in a pan to medium heat.
- Spoon small scoops of the mixture in the pan and fry for 3-5 minutes per side until golden brown.
- Remove from the pan onto paper towels and finish with a little salt.
- Serve with whipped ricotta.
