Zucchini Fritters

(Vegetarian)

These crispy little fritters are simple to make and such a delicious pair with some freshly whipped ricotta.

Zucchini Fritters

Prep time: 20 MinCook time: 5 MinTotal time: 25 Min

Ingredients

  • 2 cups Zucchini, grated and drained
  • 1 Egg
  • 1/3 cup Fresh Basil, chopped
  • 1/3 cup Parmesan, grated
  • 2 Garlic Cloves, minced
  • 1 Lemon, zested and juiced
  • 1 tsp Kosher Salt
  • 1/2 tsp Black Pepper
  • 1/4 cup AP Flour
  • Oil for pan frying
  • Whipped Ricotta, for serving

Instructions

  1. Combine ingredients in a large mixing bowl.
  2. Bring oil in a pan to medium heat.
  3. Spoon small scoops of the mixture in the pan and fry for 3-5 minutes per side until golden brown.
  4. Remove from the pan onto paper towels and finish with a little salt.
  5. Serve with whipped ricotta.
